She has three Pinot Noir plots that could go into this wine, her top cuvée, but each year, she blind tastes the grapes and juice from the different plots before deciding which is the best quality for barrel ageing. Each year, the same plot wins. She thinks it's due to the sandstone subsoil, and the complex minerality that brings. It is c\u003cmeta charset=\"utf-8\"\u003eertified organic \u0026amp; biodynamic.\u003c\/p\u003e\n\u003cp\u003ePinot Noir in Alsace historically had a difficult time ripening, but with climate change, it is now enjoying perfect growing conditions. This wine is hand harvested, aged in barriques for 12 months, and not filtered. \u003cmeta charset=\"utf-8\"\u003eThe secondary flavours and fine tannins from the oak are well integrated, perfectly supporting the fruit.\u003c\/p\u003e\n\u003cp\u003eIt's earthy with ripe fruits, red and black cherry most prominent, and forest floor on the nose and palate. Can age for a decade at least.
